- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon (optional, for extra flavor)
- Pinch of salt
- Optional: A few drops of liquid stevia or honey if you prefer a sweeter touch (but still sugar-free!)
Instructions:
- Preheat Oven:
- Set your oven to 180°C (350°F).
- Grease or line a springform pan (like in your photo).
- Mix Wet Ingredients:
- In a bowl, whisk together eggs, applesauce, melted coconut oil, and vanilla extract.
- Combine Dry Ingredients:
- In another bowl, mix almond flour, baking powder, baking soda, salt, and cinnamon.
- Combine All:
- Slowly add dry ingredients to the wet mixture and stir until smooth.
- Add Cherries:
- Pour half of the batter into the pan, sprinkle half the cherries.
- Pour the rest of the batter and top with remaining cherries, pressing them slightly into the batter.
- Bake:
- Bake for 35-40 minutes, or until golden and a toothpick comes out clean.
- Cool & Serve:
- Let it cool slightly, then slice and enjoy!
