🍒 No-Sugar Cherry Cake Recipe

Ingredients:

  • 2 cups fresh or frozen cherries, pitted
  • 2 cups almond flour (or regular flour if preferred)
  • 1 cup unsweetened applesauce (natural sweetener & keeps the cake moist)
  • 3 large eggs
  • 1/4 cup melted coconut oil or butter
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon (optional, for extra flavor)
  • Pinch of salt
  • Optional: A few drops of liquid stevia or honey if you prefer a sweeter touch (but still sugar-free!)

Instructions:

  1. Preheat Oven:
    • Set your oven to 180°C (350°F).
    • Grease or line a springform pan (like in your photo).
  2. Mix Wet Ingredients:
    • In a bowl, whisk together eggs, applesauce, melted coconut oil, and vanilla extract.
  3. Combine Dry Ingredients:
    • In another bowl, mix almond flour, baking powder, baking soda, salt, and cinnamon.
  4. Combine All:
    • Slowly add dry ingredients to the wet mixture and stir until smooth.
  5. Add Cherries:
    • Pour half of the batter into the pan, sprinkle half the cherries.
    • Pour the rest of the batter and top with remaining cherries, pressing them slightly into the batter.
  6. Bake:
    • Bake for 35-40 minutes, or until golden and a toothpick comes out clean.
  7. Cool & Serve:
    • Let it cool slightly, then slice and enjoy!
