Ingredients:
- 1 bunch fresh purslane (washed & chopped)
- 1 medium onion (finely sliced)
- 1 ripe tomato (diced)
- 2 tablespoons olive oil 🫒
- Juice of half a lemon 🍋
- 1 clove garlic (optional, minced)
- Salt 🧂 to taste
- A sprinkle of black pepper (optional)
How to Make It:
- Prep the Purslane
Wash the purslane thoroughly under running water to remove any dirt. Chop it into bite-sized pieces. - Sauté the Onion & Garlic
In a large pan, heat the olive oil over medium heat. Add the sliced onion (and garlic if you’re using it) and sauté until soft and translucent. - Add the Tomato
Toss in the diced tomato and cook for 2-3 minutes, letting it soften and release its juices. - Add the Purslane
Add the chopped purslane to the pan. Stir gently and let it cook for about 3-4 minutes until it softens but stays fresh and vibrant. - Season & Finish
Sprinkle salt and black pepper to taste. Turn off the heat and squeeze fresh lemon juice over the top for that extra tangy kick.
