- 1 cup oats (blended into flour or left whole for texture)
- 2 apples (grated or pureed)
- 2 eggs (or flax eggs for vegan)
- 1/3 cup raisins or chopped dates
- 1/3 cup chopped mixed nuts (almonds, walnuts, etc.)
- 1 tsp cinnamon
- 1/2 tsp baking soda
- A pinch of salt
- Optional: 1 tsp vanilla extract, 1โ2 tbsp coconut oil or yogurt for moisture

- Preheat oven to 180ยฐC (350ยฐF).
- In a bowl, mix grated apples and eggs (or flax eggs).
- Add oats, raisins, cinnamon, salt, and baking soda. Mix well.
- Fold in the nuts and any optional ingredients.
- Pour into a greased loaf tin. Top with extra chopped nuts if desired.
- Bake for 35โ45 minutes, or until golden and firm.
- Let it cool before slicing. Enjoy warm or chilled!
