Ingredients:

1 liter (4 cups) of whole milk (avoid ultra-pasteurized)
3 tablespoons of fresh lemon juice


Instructions:

1️⃣ Heat the Milk – Pour the milk into a pot and warm it over medium heat until it reaches about 85°C (185°F). It should be hot but not boiling.

2️⃣ Add Lemon Juice – Slowly pour in the lemon juice, stirring gently. Let it sit for 5-10 minutes until the milk starts separating into curds and whey.

3️⃣ Strain the Curds – Line a strainer with a clean cheesecloth or kitchen towel, then pour the mixture through to separate the curds from the liquid whey.

4️⃣ Drain & Shape – Gather the cloth and gently squeeze out excess liquid. For a softer cheese, leave a little moisture; for firmer cheese, press it under a weighted plate for about 30 minutes.

5️⃣ Enjoy! – Your homemade cheese is ready! Use it fresh as a spread, in salads, or even in cooking.
