This quick, nutritious dish is my go-to for a healthy and satisfying meal. Packed with vitamins from the broccoli and protein from the egg, it’s perfect for breakfast, lunch, or a light dinner. Plus, it only takes a few minutes to prepare!
Ingredients:
- 2 cups fresh broccoli florets
- 2 large eggs
- 1-2 teaspoons olive oil
- Salt and pepper, to taste
- Optional extras: a pinch of garlic powder, red pepper flakes, or a squeeze of lemon juice for brightness
Instructions:
- Prepare the Broccoli:
- Wash and cut the broccoli into bite-sized florets.
- If you like a softer texture, steam or blanch them for 2 minutes until just tender; otherwise, sauté them directly for extra crunch.
- Heat the Pan:
- In a non-stick skillet, heat the olive oil over medium heat.
- Add the broccoli florets and sauté for 4-5 minutes until they’re bright green and slightly tender but still crisp.
- Season with a pinch of salt, pepper, and garlic powder (if using).
- Cook the Eggs:
- Push the broccoli to one side of the pan.
- Crack the eggs directly into the empty space.
- Let them cook for about 1 minute, then gently scramble them, stirring occasionally until they are just set.
- Alternatively, you can lightly beat the eggs in a bowl and pour them over the broccoli for a more uniform scramble.
- Combine & Serve:
- Once the eggs are cooked to your liking, mix them thoroughly with the broccoli.
- Taste and adjust the seasoning with additional salt, pepper, or red pepper flakes for a little heat.
- For an extra burst of freshness, finish with a squeeze of lemon juice.
