Milk & Banana Cake (No Oven, No Wheat Flour, No Sugar)

Ingredients:
  • 2 ripe bananas (the riper, the sweeter!)
  • 1 cup milk (any milk: cow, almond, oat, etc.)
  • 2 eggs
  • 3 tbsp honey or maple syrup (optional, for extra sweetness โ€“ can skip)
  • 1/2 cup oat flour or rice flour
  • 1 tsp baking powder
  • 1 tsp vanilla extract (optional)
  • A pinch of salt
  • Butter or coconut oil (for greasing)

Instructions:

  1. Prepare the Batter:
    • Mash the bananas until smooth.
    • Add milk, eggs, and vanilla extract (optional) to the mashed bananas. Mix well.
    • Gradually stir in the oat or rice flour, baking powder, and salt.
    • Mix until smooth and lump-free.
  2. Grease the Pan:
    • Lightly grease a non-stick pan with butter or coconut oil.
  3. Cook the Cake:
    • Pour the batter into the greased pan.
    • Cover the pan with a lid.
    • Cook on the lowest heat for 25-30 minutes (check with a toothpickโ€”it should come out clean).
  4. Cool & Flip:
    • Let the cake cool for a few minutes, then gently flip it onto a plate.

Optional Topping Ideas (No Sugar):

  • Drizzle with a little honey (optional)
  • Sprinkle cinnamon
  • Add sliced bananas or nuts on top
