  • 30g (1 oz) oatmeal
  • 60g (2 oz) almonds
  • 30g (1 oz) peanuts
  • 20g (0.7 oz) pumpkin seeds
  • 15g (0.5 oz) sesame seeds
  • 15 ml honey
  • 130g (4.6 oz) dark chocolate (sugar-free)
  • 20 ml olive oil

Instructions:

  1. Prepare the dry mix:
    • Roughly chop the almonds and peanuts.
    • In a large bowl, combine chopped nuts, oatmeal, pumpkin seeds, and sesame seeds.
  2. Blend the sticky base:
    • In a food processor, blend the dates and cranberries until a sticky paste forms.
  3. Combine:
    • Add the date-cranberry paste and honey to the dry mix.
    • Mix everything well until it sticks together. (Use your hands if needed!)
  4. Shape the cookies:
    • Form small, bite-sized cookies or bars and place them on parchment paper.
  5. Melt the chocolate:
