- 30g (1 oz) oatmeal
- 60g (2 oz) almonds
- 30g (1 oz) peanuts
- 20g (0.7 oz) pumpkin seeds
- 15g (0.5 oz) sesame seeds
- 15 ml honey
- 130g (4.6 oz) dark chocolate (sugar-free)
- 20 ml olive oil
Instructions:
- Prepare the dry mix:
- Roughly chop the almonds and peanuts.
- In a large bowl, combine chopped nuts, oatmeal, pumpkin seeds, and sesame seeds.
- Blend the sticky base:
- In a food processor, blend the dates and cranberries until a sticky paste forms.
- Combine:
- Add the date-cranberry paste and honey to the dry mix.
- Mix everything well until it sticks together. (Use your hands if needed!)
- Shape the cookies:
- Form small, bite-sized cookies or bars and place them on parchment paper.
- Melt the chocolate:
- In a small pan, melt the dark chocolate with the olive oil over low heat, stirring until smooth.
- Coat:
