- 30 g (1 oz) oatmeal (use rolled oats)
- 60 g (2 oz) almonds
- 30 g (1 oz) peanuts

- 15 g (0.5 oz) sesame seeds
- 15 ml honey
- 130 g (4.6 oz) dark chocolate, sugar-free (min. 85% cocoa)
- 20 ml olive oil
👩🍳 Instructions:
- Soften the Dates:
Soak the pitted dates in warm water for 5–10 minutes if they’re dry, then drain and blend into a paste. - Chop the Nuts & Seeds:
Roughly chop the almonds, peanuts, and pumpkin seeds. You can toast them lightly in a dry pan for extra flavor (optional). - Combine Ingredients:
In a bowl, mix the date paste, cranberries, oats, almonds, peanuts, pumpkin seeds, sesame seeds, and honey. Stir well to form a sticky, chunky dough. - Shape the Cookies:
With damp hands, shape small balls or flatten slightly into cookie shapes. Place them on a parchment-lined tray. - Chill the Cookies:
Refrigerate the cookies for 20–30 minutes to firm up. - Melt the Chocolate:
In a heatproof bowl, melt the dark chocolate with olive oil over a pot of simmering water (double boiler method) or in short bursts in the microwave. - Coat or Drizzle:
Dip the cookies halfway into the melted chocolate or drizzle it on top. Return to the fridge until the chocolate sets.
