🫐 Ingredients:
For the Crust (healthy version):
- 1/2 cup oat flour
- 1/2 cup Greek yogurt (high-protein, unsweetened)
- 1 tbsp coconut oil or olive oil
- Pinch of salt
- Optional: 1/2 tsp vanilla extract
For the Filling:
- 1/2 cup low-fat cream cheese or Greek yogurt
- 1 tbsp honey or maple syrup (optional, to taste)
- 1/2 tsp vanilla extract
- 1/2 cup fresh or frozen blueberries
- Optional: zest of half a lemon
🍽️ How to Make It:
- Preheat the oven to 180°C (350°F).
- In a bowl, mix oat flour, Greek yogurt, oil, and salt until a soft dough forms. Roll it out into a small circle on baking paper.
- In another bowl, mix cream cheese (or yogurt), sweetener, and vanilla until smooth.
- Spread the cheesecake filling in the center of the dough, leaving edges free (about 2 cm).
- Add the blueberries on top of the filling. Sprinkle with lemon zest if using.
- Fold the edges of the dough slightly over the filling to create a rustic galette shape.
- Bake for 25–30 minutes, or until the crust is golden and the center is slightly set.
- Let it cool a few minutes — enjoy warm or cold!
💪 Why It’s Good for You:
- High in protein (from Greek yogurt and/or cream cheese)
- Full of antioxidants (from blueberries)
- No refined sugar (naturally sweetened)
