🍪 Ingredients:
- 120 g (4 oz) dates (pitted)
- 50 g (1.8 oz) dried cranberries
- 30 g (1 oz) rolled oats
- 60 g (2 oz) almonds
- 30 g (1 oz) peanuts
- 20 g (0.7 oz) pumpkin seeds
- 15 g (0.5 oz) sesame seeds
- 15 ml honey (optional if dates are sweet enough)
- 130 g (4.6 oz) dark chocolate (sugar-free)
- 20 ml olive oil
🥄 Instructions:
- Soften the Dates
- Soak dates in warm water for 10–15 minutes if they’re dry.
- Drain and blend into a thick paste.
- Prepare the Nuts and Seeds
- Lightly toast almonds, peanuts, pumpkin seeds, and sesame seeds in a dry pan for 2–3 minutes to bring out the flavor.
- Let them cool, then roughly chop or pulse in a food processor (leave a bit of texture).
- Mix Everything
- In a bowl, combine the date paste, oats, cranberries, chopped nuts/seeds, and honey.
- Mix until you get a sticky, dough-like texture.
- Form Cookies
- Shape into small round cookies or energy balls using damp hands.
- Place on parchment paper.
- Melt the Chocolate
- In a small pot, melt dark chocolate with olive oil over low heat.
- Stir until smooth.
- Coat or Drizzle
- Dip cookies halfway into the chocolate or drizzle on top.
- Place in the fridge for 30 minutes to set.
