  • 120 g (4 oz) dates (pitted)

  • 30 g (1 oz) rolled oats
  • 60 g (2 oz) almonds
  • 30 g (1 oz) peanuts
  • 20 g (0.7 oz) pumpkin seeds
  • 15 g (0.5 oz) sesame seeds
  • 15 ml honey (optional if dates are sweet enough)
  • 130 g (4.6 oz) dark chocolate (sugar-free)
  • 20 ml olive oil

🥄 Instructions:

  1. Soften the Dates
    • Soak dates in warm water for 10–15 minutes if they’re dry.
    • Drain and blend into a thick paste.
  2. Prepare the Nuts and Seeds
    • Lightly toast almonds, peanuts, pumpkin seeds, and sesame seeds in a dry pan for 2–3 minutes to bring out the flavor.
    • Let them cool, then roughly chop or pulse in a food processor (leave a bit of texture).
  3. Mix Everything
    • In a bowl, combine the date paste, oats, cranberries, chopped nuts/seeds, and honey.
    • Mix until you get a sticky, dough-like texture.
  4. Form Cookies
    • Shape into small round cookies or energy balls using damp hands.
    • Place on parchment paper.
  5. Melt the Chocolate
    • In a small pot, melt dark chocolate with olive oil over low heat.
    • Stir until smooth.
  6. Coat or Drizzle
    • Dip cookies halfway into the chocolate or drizzle on top.
    • Place in the fridge for 30 minutes to set.
